When mother nature gives you SNOW and SNOW ……..
make a
Chocolate Cake!
Heavenly chocolate cake that is!
This recipe came from Kraft Holiday Recipe Collection. They used chocolate mint candy on top, vanilla icing with green food coloring for the between layers.
(I usually make this version around Christmas. )
Cake
1 package chocolate cake mix (do not use pudding-in-the-mix variety)
1/2 cup unsweetened cocoa
3 eggs
1 1/2 cups water
1 cup Miracle Whip Salad Dressing
Frosting
1 package (8oz) Philadelphia Cream Cheese, softened
2 tablespoons milk
1 teaspoon vanilla
5 cups sifted powdered sugar
1/2 cup unsweetened cocoa
Cake: Grease and flour 2 (9-inch) round cake pans. Line bottoms of pans with wax paper. Stir cake mix and cocoa in large mixing bowl; add remaining ingredients. Beat with electric mixer on low speed 30 seconds, scraping bowl frequently. Beat with electric mixer on medium speed 2 minutes. Pour batter into prepared pans.
Bake: at 350 degrees for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Immediately remove wax paper. Cool completely on wire racks.
Frosting: Beat cream cheese, milk and vanilla with electric mixer on medium speed until well blended. Mix powdered sugar and coca. Gradually add to cream cheese mixture, beating well after each addition. Fill and frost layers. Garnish with unsweetened cocoa and chocolate twigs or peppermint Andes.
I used to make everything from scratch but since I’ve gotten older I simplify. If you decide to give it a try let me know how you like it.
