Alfredo Pasta with Spring Peas and Prosciutto

Do you like cookbooks?   I always like the simple ones.  I chose this outdoor cooking by Katie Brown for that reason and decided to make the Alfredo Pasta and share it with you.  It was only $9.00 at Tuesday Mornings.

1 pound dried linguini                                                                                         
1 tablespoon olive oil
t tablespoon butter
1/2 lb. thinly sliced prosciutto, chopped into 1-2 inch pieces
1 medium onion
l lb. fresh peas ( I used frozen)
3 cloves garlic ( I used 5)
1 jar Alfredo sauce
salt and pepper
1.2 cup Parmesan cheese
3 tablespoons chopped parsley
1. In a large pot of salted boiling water, cook linguini until tender but still firm to the bite. Drain pasta and set aside.
2. In a large nonstick sauté pan , heat olive oil with 1 tablespoon butter over medium-high heat.  Add prosciutto, onion, and garlic.  Cook until onion is translucent, then mix in peas.
3. Heat Alfredo sauce in small saucepan until warmed through.
4. In a large bowl, toss pasta, prosciutto, vegetables, and Alfredo sauce.  Season with salt and pepper. Garnish with Parmesan and parsley.
